Our Story

A Taste of Puebla,
Right Here in Beaverton

La Poblanita Cemitas was born from a simple conviction: that the flavors of a Poblano kitchen deserve a place at the table in every neighborhood. Our cemitas are pressed to order using the same techniques passed down through generations — from the blending of our mole to the selection of each cut of meat.

We source locally whenever we can and import the essentials from Puebla: our cemita pan, our pasilla chiles, our Oaxacan cheese. The result is a sandwich that doesn't compromise — crispy on the outside, layered with intention, and deeply rooted in the culinary heritage of Mexico.

Whether you're joining us for a quick lunch or sharing a meal with family, every visit to La Poblanita is an invitation to slow down and savor something made with care.

What Makes Us Different

The Details That
Make All the Difference

01

The Cemita Pan

Imported from Puebla and baked fresh — a slightly sweet, sesame-topped roll with a shatteringly crisp crust and a pillowy interior that holds every layer perfectly.

02

Mole Made from Scratch

Our mole negro is prepared in small batches, blending over a dozen chiles, spices, nuts, and a touch of chocolate. It simmers for hours until it reaches the depth our guests expect.

03

Pressed to Order

Every cemita is grilled on the plancha after assembly — the cheese melts, the bread crisps, and every bite comes out warm and cohesive. Nothing is pre-made.
